One idea might be to correct the issues, or have a good idea why your particular situation requires violating a best practice.
Another good idea would be to be the person in Missouri who bought the $250 million Powerball lottery ticket. If that's not you, and you expect to continue to work as a DBA for the indefinite future, then I would recommend concentrating on cleaning up the databases.

Not sure if you looked at 3rd party tool called BIDocumenter. It can document sql server database along with SSIS packages, SSAS Cubes and SSRS Reports.

Another 3rd party tool that can document SQL Server is XIA Configuration.
It automatically documents SQL Server instances, including detailed information about databases, tables and stored procedures. It can detect code changes within a stored procedure between database versions or environments and expose incorrectly configured SQL servers or security vulnerabilities.
There is a free version available for small networks.
The home page is here: XIA Configuration

A very easy way to document you SQL Server DB while exploring its structure is to use my tool - LiveDoco. See my signature for the link.
