Can anyone help me set up sql mail profile in SQL 2000?

Install Outlook.
Setup SQL Server as a domain account
Setup this domain account as a mail user (Exchange assumed)
Log in to the server as this user and configure Outlook to work.
From Enterprise Manager, set the profile to the profile from the prvious step.
Post if you have more problems.

I have a mail server. can I configure that server to send out notifications, from my production servers?

Once you have mail setup, you can set thsi for each job.
